Delicious Soft Double Chocolate Cookies
These cookies are ideal for chocolate lovers! They are gluten-free and vegan. And best of all, you only need a few ingredients, they are super easy to make and take less than 10 minutes to bake!

INGREDIENTS:
3 1/2 cups almond flour
3 tsp baking soda
1 cup unsweetened cocoa powder
1/2 cup coconut oil (melted)
1/2 cup almond butter
3/4 cup maple syrup
3/4 to 1 cup of chocolate chips (dairy-free)
1 tsp salt
DIRECTIONS:
Preheat oven to 150F.
In a large bowl or stand mixer, combine all dry ingredients (almond flour, baking soda, cocoa powder, salt).
Add all wet ingredients (coconut oil, almond butter, maple syrup) and stir.
Lastly, incorporate chocolate chips. Start with 3/4 cup and add more if needed - you will have chocolate chips left at the bottom of the bowl if you add too much.
Scoop out cookie dough and place them on a (greased) baking sheet. Use your palm to flatten them out or a cookie cutter.
Bake for 8 minutes.
Depending on their size, you will have between 30-40 cookies (I made 40 hearts).
These cookies won't last long! I usually freeze half to 2/3 of them to enjoy later and they are as delicious as the first day!
