Delicious Soft Double Chocolate Cookies

These cookies are ideal for chocolate lovers! They are gluten-free and vegan. And best of all, you only need a few ingredients, they are super easy to make and take less than 10 minutes to bake!




INGREDIENTS:

  • 3 1/2 cups almond flour

  • 3 tsp baking soda

  • 1 cup unsweetened cocoa powder

  • 1/2 cup coconut oil (melted)

  • 1/2 cup almond butter

  • 3/4 cup maple syrup

  • 3/4 to 1 cup of chocolate chips (dairy-free)

  • 1 tsp salt


DIRECTIONS:

  • Preheat oven to 150F.

  • In a large bowl or stand mixer, combine all dry ingredients (almond flour, baking soda, cocoa powder, salt).

  • Add all wet ingredients (coconut oil, almond butter, maple syrup) and stir.

  • Lastly, incorporate chocolate chips. Start with 3/4 cup and add more if needed - you will have chocolate chips left at the bottom of the bowl if you add too much.

  • Scoop out cookie dough and place them on a (greased) baking sheet. Use your palm to flatten them out or a cookie cutter.

  • Bake for 8 minutes.

Depending on their size, you will have between 30-40 cookies (I made 40 hearts).

These cookies won't last long! I usually freeze half to 2/3 of them to enjoy later and they are as delicious as the first day!
