Rainbow Quinoa Salad (Vegan & Gluten-Free)
The best quinoa salad you will ever make!

INGREDIENTS - Use organic ingredients!
½ cup quinoa
¼ cup frozen edamame, thawed
¼ cup frozen corn, thawed
¼ cup red pepper, diced (small)
½ cucumber, diced
1 cup mixed greens
1 handful sliced almonds
Extra virgin olive oil
Salt and pepper
DIRECTION
Start by cooking the quinoa according to the directions provided on the packet.
Dice the cucumber and red pepper.
Place mixed greens at the bottom of your bowl, add quinoa, cucumber, red pepper, corn, and edamame.
Top with sliced almonds.
Season with salt, pepper, and extra virgin olive oil. Enjoy!
