Rainbow Quinoa Salad (Vegan & Gluten-Free)

The best quinoa salad you will ever make!



INGREDIENTS - Use organic ingredients!

  • ½ cup quinoa

  • ¼ cup frozen edamame, thawed

  • ¼ cup frozen corn, thawed

  • ¼ cup red pepper, diced (small)

  • ½ cucumber, diced

  • 1 cup mixed greens

  • 1 handful sliced almonds

  • Extra virgin olive oil

  • Salt and pepper


DIRECTION

  • Start by cooking the quinoa according to the directions provided on the packet.

  • Dice the cucumber and red pepper.

  • Place mixed greens at the bottom of your bowl, add quinoa, cucumber, red pepper, corn, and edamame.

  • Top with sliced almonds.

  • Season with salt, pepper, and extra virgin olive oil. Enjoy!
