Moist and Easy Pear & Almond Cake - Vegan & Gluten-Free

This is my son’s favorite pear and almond cake! It is delicious and only takes a few minutes to prepare. It is a great opportunity to spend quality time with your loved ones or spend some time doing something for yourself while it bakes!

INGREDIENTS
1/3 cup almond meal
2 cups almond flour
1/4 cup coconut sugar
1 tsp baking powder
1/3 cup unsweetened apple sauce
1 cup almond milk
2 pears or 1 can of pear halves
1/4 cups sliced almonds - do not add to mixture
DIRECTIONS
Preheat oven to 350 F.
In a large bowl, combine all dry ingredients (except sliced almonds) and mix.
Cut pear in dice. Add it to the dry ingredients along with apple sauce and milk, and whisk.
Grease a round or square baking pan and sprinkle sliced almonds at the bottom of the pan.
Pour the mixture into the baking pan and bake for about 50 minutes. Enjoy!
