Moist and Easy Pear & Almond Cake - Vegan & Gluten-Free


This is my son’s favorite pear and almond cake! It is delicious and only takes a few minutes to prepare. It is a great opportunity to spend quality time with your loved ones or spend some time doing something for yourself while it bakes!


INGREDIENTS

  • 1/3 cup almond meal

  • 2 cups almond flour

  • 1/4 cup coconut sugar

  • 1 tsp baking powder

  • 1/3 cup unsweetened apple sauce

  • 1 cup almond milk

  • 2 pears or 1 can of pear halves

  • 1/4 cups sliced almonds - do not add to mixture


DIRECTIONS

  1. Preheat oven to 350 F.

  2. In a large bowl, combine all dry ingredients (except sliced almonds) and mix.

  3. Cut pear in dice. Add it to the dry ingredients along with apple sauce and milk, and whisk.

  4. Grease a round or square baking pan and sprinkle sliced almonds at the bottom of the pan.

  5. Pour the mixture into the baking pan and bake for about 50 minutes. Enjoy!
