Healthy Lentil Soup

This Vegan and Gluten-Free Soup is filled with healthy and nutritious ingredients and spices!



INGREDIENTS:

  • ½ tbsp extra-virgin olive oil

  • 1 onion, sweet or white

  • 2 cloves of garlic (or 2 tsp garlic powder)

  • 2 tsp grated ginger

  • 2 carrots, peeled and cut into small pieces

  • ½ tsp ground turmeric

  • ¼ tsp ground cumin

  • ¼ tsp ground coriander

  • 6 cups of vegetable broth, low sodium

  • 1 cup of lentils

  • 1 lemon, to squeeze


INSTRUCTIONS:

  1. Warm the oil in a large pot and add the onion. Sauté until translucent.

  2. Add the garlic and ginger, and stir.

  3. Add the carrots, turmeric, cumin, and coriander, and stir for 3-4 minutes.

  4. Add the vegetable broth and lentils, and stir.

  5. Bring to a boil then simmer for 15-20 minutes - uncovered.

  6. Add a light squeeze of lemon juice before serving.
