This Vegan and Gluten-Free Soup is filled with healthy and nutritious ingredients and spices!
½ tbsp extra-virgin olive oil
1 onion, sweet or white
2 cloves of garlic (or 2 tsp garlic powder)
2 tsp grated ginger
2 carrots, peeled and cut into small pieces
½ tsp ground turmeric
¼ tsp ground cumin
¼ tsp ground coriander
6 cups of vegetable broth, low sodium
1 cup of lentils
1 lemon, to squeeze
Warm the oil in a large pot and add the onion. Sauté until translucent.
Add the garlic and ginger, and stir.
Add the carrots, turmeric, cumin, and coriander, and stir for 3-4 minutes.
Add the vegetable broth and lentils, and stir.
Bring to a boil then simmer for 15-20 minutes - uncovered.
Add a light squeeze of lemon juice before serving.
