Energy Bites

These bites are so good, healthy and ready in a few minutes! They make a nutritious breakfast, a healthy snack or a nice treat. They are a favorite in my family.

Recipe adapted from Dr Greger's How not to die cookbook".



INGREDIENTS

  • 3/4 cup pitted dated, soaked in hot water for 10 minutes, then drained

  • 3/4 cups nuts - I use cashews but walnuts or pecans will do

  • 3/4 cups dried fruit - I use cranberries but you may use apricots, apple slices

  • 1/4 cup sunflower seeds

  • 2 tbsp chia seeds

  • 2 tbsp ground flaxseeds

  • 1/4 tsp ground cinnamon


DIRECTIONS

  1. In a food processor, combine dates and nuts until well incorporated.

  2. Add remaining ingredients and process until well combined. The mixture will be sticky.

  3. Roll a tablespoon of the mixture into a 1-inch ball and place on a plate that you will cover with foil and refrigerate.

  4. Store in the refrigerator until you are ready to enjoy them.

* I rolled mine in unsweetened shredded coconut.
