Cranberry Quinoa Energy Bar

This energy bar is packed with superfoods. It is delicious and healthy. It is perfect if you need the energy or if you are just looking for a healthy snack.


INGREDIENTS

  • 1/2 cup raw quinoa, rinsed

  • 1 cup chopped almonds

  • 1/2 cup sunflower seeds

  • 1 cup dried organic cranberries

  • 2 tbsp honey


DIRECTIONS

  1. Place quinoa, almonds, and sunflower seeds on a baking sheet and mix.

  2. Bake for about 15 minutes at 350F.

  3. In a food processor, add cranberries and honey and process until well combined.

  4. Transfer mixture into a bowl and stir in the nut mix.

  5. Line a small baking pan (8x8 or smaller) with parchment paper and transfer the mixture, pressing with your fingers to make it even.

  6. Bake at 350F for about 20 minutes.

  7. Let cool and cut into pieces. ENJOY!
