Chocolate Chip Cookies - Vegan & Gluten-Free

These cookies will not last long! My advice: make double batch! :)



INGREDIENTS:

  • ¼ cup coconut sugar

  • ¼ cup coconut oil (solidified)

  • 2 tsp pure vanilla extract

  • 2 tbsp unsweetened almond milk

  • 1 cup almond flour

  • 1 cup gluten-free oat flour

  • ½ tsp sea salt

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ½ cup dark chocolate chips

DIRECTIONS:

  • Preheat oven to 350F.

  • In a bowl or stand mixer, combine coconut sugar and coconut oil.

  • Add vanilla extract and almond milk and whisk ingredients together to combine.

  • Add the remainder of the dry ingredients and mix until well incorporated.

  • Stir in chocolate chips.

  • Scoop out cookie dough and place them on a baking sheet. Use your palm to flatten them out.

  • Bake for 13-15 minutes.
