Chocolate Chip Cookies - Vegan & Gluten-Free
These cookies will not last long! My advice: make double batch! :)

INGREDIENTS:
¼ cup coconut sugar
¼ cup coconut oil (solidified)
2 tsp pure vanilla extract
2 tbsp unsweetened almond milk
1 cup almond flour
1 cup gluten-free oat flour
½ tsp sea salt
½ tsp baking powder
½ tsp baking soda
½ cup dark chocolate chips
DIRECTIONS:
Preheat oven to 350F.
In a bowl or stand mixer, combine coconut sugar and coconut oil.
Add vanilla extract and almond milk and whisk ingredients together to combine.
Add the remainder of the dry ingredients and mix until well incorporated.
Stir in chocolate chips.
Scoop out cookie dough and place them on a baking sheet. Use your palm to flatten them out.
Bake for 13-15 minutes.
