Chocolate Banana Bread - Vegan & Gluten-Free

This cake is perfect when you want to use your ripe bananas. It is easy to make, delicious, and moist.
INGREDIENTS
3 ripe bananas
½ tsp pure vanilla extract
1 flax egg
3 tbsp coconut oil
1 tbsp honey (replace with coconut sugar to make it vegan or leave it out)
2 tbsp maple syrup
3 ½ tsp baking powder
¼ tsp salt
½ tsp ground cinnamon
¾ cup unsweetened almond milk
1 ½ cup almond meal
1 cup gluten-free flour
1 cup gluten-free oats
½ cup dark chocolate chips
DIRECTIONS
Preheat oven to 350 F.
In a large bowl or stand mixer, add bananas, vanilla extract, coconut oil, honey, maple syrup, baking powder, salt, ground cinnamon, and almond milk.
Whisk ingredients together to combine.
Add flour, oats, and chocolate chips.
Bake for about 50-55 minutes.
Variation: 2 cups of almond flour + 1 cup of gluten-free flour + 1/2 cup oats instead of the almond meal, gluten-free flour and oats.
